Raspberry Oatmeal Bars Recipe
Ingredients
1 1/2 Cups All-Purpose Flour
1 1/2 Cups Oatmeal
3/4 Cup Brown Sugar, Packed
1 Teaspoon Baking Powder
1/2 Teaspoon Salt
14 Tablespoons Butter, Cold
10 Ounce Jar Raspberry Jam
Directions
Preheat oven to 350 degrees Fahrenheit.
Mix dry ingredients into a large bowl. Cut butter into small cubes before adding it to the dry ingredients. Using you hand or a pastry cutter mix the butter into the dry ingredients until the cubes of butter reduce to the size of a pea.
Grease a 9 x 13 inch pan. Press half of the flour mixture firmly into the greased pan. Warm up the jam so it spreads easily. Spread the jam over the flour mixture, making sure the jam reaches the edge of the pan. Finally place the remainder of the flour mixture over the jam and press lightly.
Place pan into the oven for 30 - 40 minutes or until the bars are lightly browned. Let the bars cool completely before cutting.
Warm bars would pair nicely with some vanilla ice cream for dessert.
